  • 3 large eggs
  • 1 tbsp olive oil
  • 2 tbsp light soy sauce
  • 1/2 tsp dark soy sauce optional
  • 20 g green onions chopped
  • Salt to taste

Method

  1. Crack 1 egg into a bowl and beat well. Set aside.
  2. Place 360g of leftover cooked rice in a large bowl. Use a spoon to break up any clumps.

Tips for Perfect Egg Fried Rice

  • Use cold leftover rice. Refrigerated rice works best because the grains are firmer and less sticky, making it easier to achieve fluffy, separated fried rice.
  • Coat the rice with egg first. Mixing one beaten egg into the rice before frying helps give the grains a beautiful golden color.
  • Keep the rice moving. Stir-fry over medium heat to heat the rice evenly and prevent sticking.
  • Adjust the soy sauce. Light soy sauce adds savory flavor, while dark soy sauce gives the rice a richer color. Dark soy sauce is optional.
  • Add green onions last. This keeps their fresh flavor and beautiful green color.
