Ingredients

  • 360 g leftover cooked rice
  • 3 large eggs
  • 1 tbsp olive oil
  • 2 tbsp light soy sauce
  • 1/2 tsp dark soy sauce optional
  • 20 g green onions chopped
  • Salt to taste

Method

  1. Crack 1 egg into a bowl and beat well. Set aside.
  2. Place 360g of leftover cooked rice in a large bowl. Use a spoon to break up any clumps.
  3. Pour the beaten egg over the rice and mix thoroughly until every grain is evenly coated with egg.
  4. Crack the remaining 2 eggs into another bowl. Add a pinch of salt and beat until well combined.
  5. Heat 1 tablespoon of olive oil in a nonstick skillet over medium heat. Pour in the beaten eggs and stir quickly with a wooden or silicone spatula until they form small, soft pieces.
  6. Add the egg-coated rice to the skillet. Stir-fry over medium heat for 3–5 minutes, breaking up any remaining clumps.
  7. Add 2 tablespoons of light soy sauce and stir well. Add 1/2 teaspoon of dark soy sauce for a deeper color, if desired.
  8. Taste and season with additional salt if needed. Add the chopped green onions and stir-fry for another minute.
  9. Turn off the heat, transfer the fried rice to a serving plate, and enjoy!
