Ingredients
Method
- Heat a nonstick skillet over medium heat. Add the olive oil and unsalted butter. Once the butter has melted, place one tortilla in the skillet.
- Crack five eggs into a bowl. Grate the mozzarella cheese and finely chop the fresh parsley.
- Pour the eggs directly onto the tortilla. Season with salt, black pepper, and red pepper flakes.
- Sprinkle some chopped parsley and mozzarella cheese over the eggs, reserving the remaining cheese for later.
- Place the second tortilla on top. Cover with a lid and cook over medium-low heat for about 5 minutes, until the eggs are mostly set.
- Carefully flip the tortilla using a spatula or a plate.
- Arrange the tomato slices on top. Season with salt and black pepper, then place a fresh spinach leaf on each tomato slice.
- Sprinkle the remaining mozzarella cheese over the top. Cover and cook over medium-low heat for another 3–5 minutes, until the eggs are fully cooked and the cheese has melted.
- Remove the lid, garnish with the remaining fresh parsley, and transfer to a serving plate. Cut into wedges and enjoy!
Notes
Use medium-low heat to prevent the tortillas from burning while the eggs cook.
Make sure the eggs are mostly set before flipping to keep the filling from spilling out.
Use a large plate to flip the tortilla more easily and safely.
Freshly grated mozzarella melts beautifully and gives the tortilla a delicious cheesy texture.
Serve immediately while the tortillas are crispy and the cheese is warm and melted.
