Ingredients

  • 2 tortillas
  • 5 large eggs
  • 100 g mozzarella cheese grated
  • 10 ml olive oil
  • 10 g unsalted butter
  • 1 medium tomato sliced
  • 10 g fresh parsley chopped
  • A few fresh spinach leaves
  • Salt to taste
  • Black pepper to taste
  • A pinch of red pepper flakes

Method

  1. Heat a nonstick skillet over medium heat. Add the olive oil and unsalted butter. Once the butter has melted, place one tortilla in the skillet.
  2. Crack five eggs into a bowl. Grate the mozzarella cheese and finely chop the fresh parsley.
  3. Pour the eggs directly onto the tortilla. Season with salt, black pepper, and red pepper flakes.
  4. Sprinkle some chopped parsley and mozzarella cheese over the eggs, reserving the remaining cheese for later.
  5. Place the second tortilla on top. Cover with a lid and cook over medium-low heat for about 5 minutes, until the eggs are mostly set.
  6. Carefully flip the tortilla using a spatula or a plate.
  7. Arrange the tomato slices on top. Season with salt and black pepper, then place a fresh spinach leaf on each tomato slice.
  8. Sprinkle the remaining mozzarella cheese over the top. Cover and cook over medium-low heat for another 3–5 minutes, until the eggs are fully cooked and the cheese has melted.
  9. Remove the lid, garnish with the remaining fresh parsley, and transfer to a serving plate. Cut into wedges and enjoy!

Notes

Use medium-low heat to prevent the tortillas from burning while the eggs cook.
Make sure the eggs are mostly set before flipping to keep the filling from spilling out.
Use a large plate to flip the tortilla more easily and safely.
Freshly grated mozzarella melts beautifully and gives the tortilla a delicious cheesy texture.
Serve immediately while the tortillas are crispy and the cheese is warm and melted.
