Ingredients:

  • 100g milk
  • 100g Greek yogurt (or any thick yogurt)
  • 1 tablespoon sugar
  • 1 teaspoon active dry yeast
  • 250g all-purpose flour or bread flour
  • 3g salt
  • 15 ml olive oil

Instructions:

  1. Activate the Yeast
Pour milk into a large bowl.
    Add yogurt and mix well.
Add sugar and yeast, stir, and let sit for 5 minutes until activated.
  2. Make the Dough
    Add flour and salt.
Mix until no dry flour remains.
Add olive oil and knead into a soft dough.
  3. First Rise
Cover and let the dough rise until doubled, about 1.5 hours.
  4. Shape the Dough
    Lightly flour your work surface.
Punch down the dough and transfer it to the board.
Fold and shape into a ball.
    Divide into 8 equal pieces.
  5. Second Rise
    Grease a pan lightly.
Shape each piece into a smooth ball and place in the pan.
Cover and let rise for 30–45 minutes.
  6. Cook in Pan
Brush the tops with olive oil.
Cover and cook on low heat for 15 minutes.
  7. Flip and Finish
    Remove the lid.
Place parchment paper on top and flip using a lid.
Return to the pan, cover, and cook for another 15 minutes.
  8. Cool
Transfer to a rack and remove parchment paper.
    Let cool before serving.

Tips:
Cook on low heat to avoid burning while ensuring the bread cooks through. The yogurt helps create a soft and tender texture.
