\"\"

Don’t throw away leftover bread! Turn it into this quick and delicious bread and egg skillet with tomato sauce, melted mozzarella, and fresh tomatoes.

It’s crispy and golden on the outside, soft and cheesy inside, and makes an easy breakfast, lunch, or quick meal using ingredients you probably already have at home.

Ingredients

  • 4 eggs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 slices bread
  • Olive oil, for cooking
  • 2 tablespoons tomato sauce
  • Mozzarella cheese, shredded, as needed
  • A few grape tomatoes, halved
  • Fresh parsley, chopped

Instructions

1. Prepare the Eggs

Crack 4 eggs into a large bowl.

Add the salt and black pepper.

Whisk until well combined and set aside.

2. Prepare the Bread

Tear 3 slices of bread into small pieces and place them in a large bowl.

This recipe is a great way to use leftover or slightly stale bread instead of throwing it away.

3. Combine the Bread and Eggs

Pour the beaten eggs over the bread pieces.

Mix thoroughly until all the bread is evenly coated and has absorbed some of the egg mixture.

4. Cook the First Side

Preheat a nonstick skillet over medium-low heat.

Add a little olive oil and brush it evenly over the bottom of the pan.

Pour in the bread and egg mixture.

Use a silicone spatula to spread and gently press it into an even layer.

Cover and cook for 3–5 minutes, or until the bottom is set and lightly golden.

5. Flip

Remove the lid and gently shake the skillet to make sure the bread-and-egg base isn\’t sticking.

Carefully flip it over.

6. Add the Toppings

Spread about 2 tablespoons tomato sauce evenly over the top.

Sprinkle with a layer of shredded mozzarella.

Arrange the halved grape tomatoes over the cheese.

Add another layer of mozzarella and finish with chopped fresh parsley.

7. Finish Cooking

Cover the skillet again.

Cook for about 3 minutes, or until the mozzarella is completely melted and the bottom is beautifully golden.

8. Serve

Transfer to a serving plate and cut into slices.

Serve while warm and cheesy.

Crispy on the outside, soft inside, and loaded with melted cheese—an easy way to turn a few slices of leftover bread into a completely new meal.

Tips

Slightly stale bread works well. It absorbs the egg mixture nicely, so there\’s no need to throw yesterday\’s bread away.

Use medium-low heat. This gives the center enough time to set without burning the bottom.

Make sure the first side is set before flipping. If it still feels very soft, give it another minute.

Change the toppings. Mushrooms, spinach, bell peppers, olives, or different cheeses would all work.
