3. Combine with the Eggs

Pour the egg mixture over the tortilla strips.

Mix thoroughly until all the strips are evenly coated.

4. Cook the Tortilla Base

Preheat a skillet over medium heat.

Add a little olive oil and brush it evenly over the bottom.

Cover and cook over medium-low heat for 3–5 minutes, or until the bottom is set and lightly golden.

5. Flip

Place a large plate over the skillet and carefully flip the tortilla base onto the plate.

Return it to the skillet with the cooked side facing up.

  • 2 eggs
  • 150 g cucumber
  • 10 g fresh cilantro
  • Olive oil or other cooking oil

  • 1 red chili
  • 2 tablespoons cooking oil
  • 1 tablespoon light soy sauce
  • ½ tablespoon vinegar
  • ½ teaspoon salt

Stack 2 tortillas together.

Roll them tightly and cut them into thin strips.

2. Make the Tortilla Strips Crispy

Preheat a skillet over medium heat.

Add a little olive oil.

Add the tortilla strips and stir-fry for approximately 3–4 minutes, or until crispy and golden.

Transfer them to a large bowl.

3. Cook the Egg

Crack 2 eggs into a small bowl and whisk well.

Add a little more oil to the skillet.

Pour in the beaten eggs and cook into a thin egg pancake.

Transfer to a cutting board.

Fold the egg pancake in half and cut it into thin strips.

Add the egg strips to the crispy tortillas.

4. Make the Garlic-Chili Dressing

Finely chop 3 garlic cloves and place them in a small heatproof bowl.

Cut the red chili into small pieces and add it to the garlic.

Heat 2 tablespoons oil until hot.

Carefully pour the hot oil directly over the garlic and chili.

Add the light soy sauce, vinegar, and salt.

Mix well.

5. Prepare the Vegetables

Cut the cucumber into thin slices, then into thin strips.

Add the cucumber to the tortilla and egg mixture.

Chop the fresh cilantro and add it to the bowl.

6. Toss the Salad

Pour the garlic-chili dressing over everything.

Toss until the tortilla, egg, cucumber, and herbs are evenly coated.

Transfer to a serving plate and serve.

The crispy tortilla strips contrast really nicely with the fresh cucumber, while the garlic-chili dressing gives the whole dish a savory, slightly spicy flavor.
