Grated Apple Pancakes – Soft & Easy Breakfast Recipe

\"\"

These soft apple pancakes are filled with fresh grated apple in every bite. Sour cream makes them especially tender, while the little pieces of apple add natural sweetness and texture.

They\’re simple to make in a skillet and perfect for breakfast, brunch, or an afternoon snack.

Ingredients

  • 1 apple
  • ¼ teaspoon lemon juice
  • 2 eggs
  • ½ cup milk
  • ½ cup sour cream
  • 2 tablespoons unsalted butter, melted
  • ½ cup all-purpose flour
  • ¼ teaspoon baking soda
  • 2 tablespoons sugar
  • Olive oil, for cooking

Instructions

1. Prepare the Apple

Grate the apple into thin shreds using a grater.

Add about ¼ teaspoon lemon juice and mix well. This helps keep the grated apple from browning too quickly.

Set aside.

2. Prepare the Batter

Crack 2 eggs into a large mixing bowl and whisk until well combined.

Pour in the milk and add the sour cream.

Whisk until smooth.

Add the melted unsalted butter and mix again.

3. Add the Dry Ingredients

Sift the all-purpose flour directly into the wet mixture.

Add the baking soda and sugar.

Mix until you have a smooth, lump-free batter.

4. Add the Apple

Add the grated apple to the batter.

Gently fold until the apple is evenly distributed throughout the mixture.

5. Cook the Pancakes

Preheat a nonstick skillet over medium heat.

Add a small amount of olive oil and brush it evenly over the surface.

Scoop a spoonful of batter into the skillet and quickly spread it into a small pancake.

Cook for about 3 minutes.

When small bubbles begin to appear on the surface and the bottom is golden brown, carefully flip the pancake.

6. Cook the Other Side

Cook for another 2–3 minutes, or until both sides are golden brown and the center is cooked through.

Transfer to a serving plate.

Repeat with the remaining batter.

7. Serve

Serve the apple pancakes warm.

They\’re soft and tender, with delicious little pieces of apple throughout every bite.

You can enjoy them as they are or serve them with Greek yogurt, fresh fruit, a little honey, or your favorite pancake topping.

Tips

Don\’t overmix the batter. Once the flour is incorporated, mix only until smooth.

Spread the batter quickly. The grated apple makes the batter thicker than regular pancake batter.

Use medium heat. If the pan is too hot, the outside can brown before the center has fully cooked.

Choose a naturally sweet apple. This gives the pancakes more apple flavor without needing a lot of added sugar.
