Ingredients

  • 5 eggs
  • 1 red onion, finely chopped
  • 100 g bell peppers, diced
  • 1 tomato, sliced
  • 50 g mozzarella cheese, shredded
  • Olive oil, for cooking
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped

Instructions

1. Sauté the Onion

Preheat a skillet over medium heat and add a little olive oil.

Add the finely chopped red onion and sauté for about 2 minutes, stirring occasionally.

2. Add the Bell Peppers

Add 100 g diced bell peppers.

Continue cooking for another 2 minutes.

Season with salt and black pepper and stir well.

3. Add the Eggs

Make 5 small wells in the sautéed vegetables.

Crack one egg into each well.

4. Add the Tomato

Slice the tomato and arrange the slices around the eggs.

Cover the skillet with a lid.

Cook over medium-low heat for 3–5 minutes, or until the egg whites are mostly set.

5. Add the Cheese

Remove the lid and sprinkle 50 g shredded mozzarella evenly over the top.

Cover again and cook for another 3 minutes, or until the cheese is completely melted.

6. Finish and Serve

Remove from the heat and sprinkle with freshly chopped parsley.

Serve immediately while the eggs are warm and the mozzarella is still melted.

Simple, colorful, cheesy, and delicious!

Tips

Don\’t overcook the vegetables. A short sauté keeps the bell peppers colorful and gives them a little texture.

Use medium-low heat after adding the eggs. This helps the whites cook gently without burning the vegetables underneath.

Adjust the eggs to your preference. For softer yolks, remove the skillet sooner; for fully cooked yolks, give them a little more time.

Use any bell peppers you have. Red, yellow, orange, or a combination all work well.
