2. Add the Egg

Pour the beaten egg into the cottage cheese, but reserve about 10 g of the egg mixture for brushing the bagels before baking.

Mix until combined.

3. Add the Dry Ingredients

Add 150 g all-purpose flour, 8 g baking powder, 3 g salt, and 10 g chia seeds.

4. Add the Cheese and Vegetables

Add 50 g grated mozzarella.

Finely chop the parsley and spinach and add both to the bowl.

Pour in 1 tablespoon olive oil.

Mix until the ingredients begin to come together.

5. Form the Dough

Use your hands to gently bring the mixture together into a soft dough.

Don\’t over-knead. Knead only until everything is combined.

Lightly flour your work surface and transfer the dough onto it.

6. Divide and Shape

Roll the dough into a log and divide it into 8 equal pieces.

Take one piece and roll it into a ball.

Gently flatten it, then make a small hole in the center.

Carefully shape it into a bagel.

Place it on a parchment-lined baking sheet.

Repeat with the remaining 7 pieces.

7. Brush and Bake

Brush the tops with the reserved beaten egg.

Bake in a preheated 375°F (190°C) oven for approximately 20 minutes, or until beautifully golden.

Transfer the bagels to a wire rack and allow them to cool slightly.

How to Make a Cottage Cheese Bagel Breakfast Sandwich

While the bagels are baking, fry an egg and set it aside.

Slice one bagel in half.

Spread a little mayonnaise over both cut sides.

Layer with lettuce, the fried egg, sliced onion, tomato, and another layer of lettuce.

Season the egg with a little salt and black pepper.

Place the other half of the bagel on top and serve.

You now have an easy homemade breakfast sandwich that\’s also great for a quick lunch.

Tips

Blend the cottage cheese first. This gives the dough a much smoother texture.

Don\’t over-knead the dough. Unlike yeast bread, this dough only needs to be mixed until everything comes together.

If the dough is sticky, lightly flour your hands and work surface rather than adding a large amount of extra flour.

Keep the bagels similar in size. Dividing the dough into 8 equal pieces helps them bake evenly.

These aren\’t traditional yeast bagels. They\’re a quick, soft baked version made with cottage cheese and baking powder, so the texture will naturally be different from a boiled New York-style bagel.
