Ingredients

  • 2 eggs
  • 10 g green onion, chopped
  • 1 tortilla
  • 50 g mozzarella cheese, shredded
  • 1 tomato, thinly sliced (use about 4 slices)
  • Bell pepper, chopped, as desired
  • Ham, optional
  • Salt, to taste
  • Black pepper, to taste
  • Olive oil, for cooking

Instructions

1. Prepare the Eggs

Crack 2 eggs into a bowl.

Season with salt and black pepper.

Add about 10 g chopped green onion and whisk until well combined.

2. Cook the Eggs

Heat a nonstick skillet over medium heat.

Add a little olive oil and brush it evenly over the bottom of the pan.

Pour in the egg mixture and spread it evenly.

3. Add the Tortilla

Just before the eggs are completely set, place 1 tortilla directly over the eggs.

Cook over medium heat for about 2 minutes, or until the tortilla and egg layer moves easily in the skillet.

Carefully flip it over.

4. Add the Filling

Sprinkle a little shredded mozzarella over the tortilla.

Arrange 4 thin tomato slices over one half.

Add some chopped bell pepper or any vegetables you like.

You can also add a few slices of ham if desired.

Sprinkle the remaining mozzarella over the filling. You\’ll need approximately 50 g mozzarella in total.

5. Fold and Cook

Fold the tortilla in half.

Continue cooking, turning as needed, until both sides are crispy and golden brown and the mozzarella inside has completely melted.

6. Serve

Transfer to a plate and serve immediately.

The outside is crispy and golden while the inside is filled with soft egg, vegetables, and melted cheese—an easy breakfast you can make in just a few minutes.

Tips

Add the tortilla before the egg completely sets. This helps the tortilla stick to the egg layer when you flip it.

Don\’t overfill it. Too much filling makes the tortilla harder to fold and flip.

Customize the vegetables. Spinach, mushrooms, onion, or leftover cooked vegetables would all work.

Keep the heat around medium. You want the tortilla to become crisp without burning before the cheese melts.
