Ingredients

  • 250 g ground beef
  • 1 egg
  • 50 g onion, finely chopped
  • 15 g green onions, chopped
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Paprika, to taste
  • 4 tortillas, about 17 cm / 6.7 inches in diameter
  • Olive oil, for cooking and brushing
  • 1 tablespoon water

Instructions

1. Prepare the Beef Filling

Place 250 g ground beef in a large bowl.

Crack in 1 egg.

Season with salt, black pepper, and paprika.

Mix until well combined.

Add the finely chopped onion and green onions.

Pour in 1 tablespoon olive oil and mix again until evenly combined. Set aside.

2. Prepare the Tortillas

Prepare 4 tortillas, approximately 17 cm (6.7 inches) in diameter.

Using kitchen scissors, make the cut needed for folding each tortilla.

3. Add the Beef

Place a portion of the beef mixture onto each tortilla.

Spread it into a thin, even layer, leaving one section of the tortilla uncovered so it can be folded properly.

Try to keep the beef layer relatively thin so it cooks completely in the skillet.

4. Fold the Tortillas

Fold each tortilla over the filling to create a compact layered pocket.

Repeat with the remaining tortillas.

5. Cook the First Side

Preheat a skillet over medium heat and add a little olive oil.

Place the folded tortillas into the skillet.

Brush the tops lightly with olive oil.

Reduce to medium-low heat and cook for approximately 5–8 minutes, or until the bottoms are golden brown.

6. Flip and Finish Cooking

Carefully flip each tortilla.

Add 1 tablespoon water to the skillet and continue cooking over medium-low heat for another 5–8 minutes.

Cook until the tortillas are crispy and golden and the ground beef is fully cooked through.

7. Serve

Transfer to a serving plate and allow them to cool briefly before serving.

They\’re crispy on the outside with a juicy, flavorful beef filling inside.

Serve warm with your favorite dipping sauce or a fresh salad.

Tips

Spread the beef thinly. This is important because the raw beef needs to cook completely inside the folded tortilla.

Keep the heat moderate. If the skillet is too hot, the tortilla can brown before the beef is fully cooked.

Check the beef before serving. Ground beef should reach an internal temperature of 160°F (71°C).

Don\’t skip the small amount of water. It creates a little steam in the pan, helping the filling cook without requiring high heat.
