  • 1 zucchini, grated
  • 40 g sweet pepper, diced
  • ½ onion, diced
  • 1 green onion, finely chopped
  • 10 g fresh parsley, chopped
  • 50 g old-fashioned rolled oats
  • ½ teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • Salt and black pepper, to taste
  • Cooking oil spray
  • Black or white sesame seeds
  • 80 g feta cheese, cubed

For the Garlic Yogurt Sauce

  • 2 tablespoons Greek yogurt
  • 1 teaspoon fresh lemon juice
  • 5 g fresh parsley, finely chopped
  • 1 garlic clove, minced
  • 1 teaspoon olive oil
  • Salt and black pepper, to taste

Instructions

1. Prepare the Eggs

Crack the eggs into a bowl.

Season with salt and black pepper, then whisk until well combined. Set aside.

2. Prepare the Vegetables

Grate the potato, carrot, and zucchini into a large bowl.

Add the diced sweet pepper and onion.

Add the chopped green onion and parsley.

Mix until all the vegetables are evenly combined.

3. Make the Oat Mixture

Pour the beaten eggs over the vegetables.

Blend the rolled oats into a fine oat flour and add it to the bowl.

Add paprika, garlic powder, oregano, salt, and black pepper.

Mix everything thoroughly.

Cover and let rest for 10 minutes. This allows the oats to absorb some of the moisture released by the vegetables.

4. Assemble

Line a baking sheet with parchment paper.

Lightly spray with cooking oil and spread the oil evenly over the parchment.

Stir the vegetable mixture again, then transfer it to the baking sheet.

Use a silicone spatula to spread it into an even layer.

Sprinkle with black or white sesame seeds.

Cut the feta into small cubes and distribute them evenly over the top.

5. Bake

Bake in a preheated 375°F (190°C) oven for 15–20 minutes, or until the vegetables are cooked through and the top is lightly golden.

6. Make the Garlic Yogurt Sauce

Combine the Greek yogurt, lemon juice, parsley, garlic, and olive oil in a small bowl.

Season with salt and black pepper.

Mix until smooth and set aside.

7. Serve

Remove the vegetable bake from the oven and allow it to cool slightly.

Cut into small squares and transfer to a serving plate.

Serve on its own or with the creamy garlic yogurt sauce.

Enjoy!
