Soft Yogurt Flatbread with Pockets

These soft yogurt flatbreads are cooked right in a skillet—no oven needed! They puff up beautifully while cooking, creating a pocket inside that\’s perfect for your favorite fillings.

Greek yogurt helps keep the flatbread soft and tender, making these perfect for breakfast, lunch, sandwiches, or a quick snack.

Ingredients

  • 250 g all-purpose flour
  • 3 g instant yeast
  • 6 g sugar
  • 3 g salt
  • 90 g Greek yogurt or other thick plain yogurt
  • 100 ml warm water
  • 1 tablespoon olive oil

Instructions

1. Make the Dough

Add the flour, instant yeast, sugar, and salt to a large mixing bowl. Mix well.

Add the Greek yogurt and warm water.

Mix until no dry flour remains.

Add the olive oil and knead by hand until a soft, smooth dough forms.

2. Let the Dough Rise

Cover the bowl and let the dough rise until doubled in size, about 1½ hours, depending on room temperature.

3. Divide the Dough

Lightly flour your work surface.

Gently press the risen dough to release the air and transfer it to the floured surface.

Flatten it into a round and divide into 8 equal pieces.

Shape each piece into a smooth ball.

Cover with a clean kitchen towel and let rest for 10–15 minutes.

4. Roll Out the Flatbreads

Take one dough ball and roll it into a round approximately 12 cm (4¾ inches) in diameter.

Try to keep the thickness even so the flatbread can puff properly.

5. Cook in a Skillet

Preheat a dry skillet over medium heat. No oil is needed.

Place one flatbread into the hot skillet.

Cook for approximately 45 seconds, or until large bubbles begin forming on the surface.

Flip and cook the other side for another 45 seconds.

Flip once more. The flatbread should begin to inflate and puff up like a balloon.

Once fully puffed and cooked through, transfer it to a plate.

Repeat with the remaining dough.

6. If Your Flatbread Doesn\’t Puff

Don\’t worry if a flatbread doesn\’t inflate immediately.

Gently press one side with a silicone or wooden spatula. This can help push the trapped steam through the bread and encourage it to puff.

7. Keep Them Soft

Keep the cooked flatbreads covered with a clean kitchen towel while you cook the remaining pieces.

This helps trap moisture and keeps them soft instead of allowing them to dry out.

How to Serve

Once slightly cooled, cut a flatbread open and you\’ll find a pocket inside.

Fill it with anything you like—cheese, vegetables, eggs, chicken, ham, salad, or even fresh fruit.

They\’re soft, fluffy, and perfect for breakfast, lunch, sandwiches, or a quick snack.
